Panettone is undoubtedly one of the most beloved Italian cakes around Christmas time. It was probably born in Milan around 1499 out of an emergency situation. During a reception for Prince Ludovico Sforza, the original dessert burned in the oven. The chef Antonio sacrificed his supply of yeast and, with flour, eggs, sugar, candied fruit, and raisins, managed to create a cake with a light and fluffy texture. This new dish was so well-received by the prince and other nobles that it was called Pan de Toni (Toni's bread), which eventually became the name "Panettone."
